Georgian cuisine reflects the dramatic history of the country - looking at it, it´s possible to recognize the influence of the local superpowers (mainly Persia and Russia), which for a long time fought for the control here. Still, it has managed to retain its original character. It can be recognized especially by its widespread usage of walnuts - the Georgian cooks are able to put these ingredients virtually everywhere.
For starters, it's hard to find dishes anywhere that so deftly intermingle Eastern and Western techniques: platters of soup dumplings, called khinkali, are as big an attraction in Tbilisi as they are in Shanghai, while Georgia's supple flatbreads parallel India's best naan, puffed and scorched on the inner walls of traditional clay toné ovens.
Georgians had the advantage of being able to cherry-pick the best of what the Greeks, Mongols, Turks, and Arabs were cooking along the Silk Road. When Russian poet Alexander Pushkin asserted that "every Georgian dish is a poem," I like to think he wasn't referring just to flavor and artful presentation but also to the coalescence of cultures on the plate.
Georgian cuisine is characterized by the contrast between spicy and hot. Another distinctive feature is the abundance of various meat dishes – it is difficult to imagine Georgian table without them. Therefore, they say that in Georgia it is simply impossible to be a vegetarian. In fact, vegetable dishes are also widely spread in the country. They are cooked as a side dish for meat and fish or as a separate dish.
